Uncommon Food Allergies
Each of the following allergies affects a smaller portion of the population than “the big 9,” but can still lead to significant discomfort or serious reactions. Knowing the signs is an important first step in feeling confident about what you eat.
1. Corn
Corn is often found in unexpected places, including processed foods, sweeteners, medications, and even hygiene products. A corn allergy may present through skin reactions like hives, gastrointestinal issues such as nausea or bloating, or in more severe cases, respiratory distress. The only products that contain corn in our facility are a couple we must outsource like our vegan cheese and vibrant food dyes. At The Difference Baker, we swap corn-based ingredients—like baking powder and powdered sugar—for tapioca-based alternatives. Yes, it costs more, but your safety is priceless.
2. Gelatin
Derived from animal collagen, gelatin is commonly used in gummy candies, marshmallows, and some vitamins or medications. Symptoms may include stomach cramps, itching, rashes, and in rare cases, anaphylaxis. Because it’s often hidden in ingredient lists, it can be difficult to spot unless you’re checking labels closely! Our pledge: zero gelatin in every treat.
3. Red Meat
An allergy you can develop after a tick bite—seriously! Called Alpha-Gal Syndrome, the reaction can hit 3–8 hours after eating beef, pork, or lamb with symptoms like hives, stomach cramps, and in severe cases, anaphylaxis. While we’re baking, we steer clear of all animal-derived collagen—just another way we protect your well-being.
4. Mustard
Even though outages seem rare, mustard allergy can be nasty—think eczema, hives, wheezing, or digestive pain. It's a sneaky ingredient in marinades, salad dressings, and spice blends . That’s why mustard is never on our ingredient list.
5. Mango
People with mango allergies often experience oral allergy syndrome (OAS), which causes itching or swelling of the lips, mouth, or throat. In some cases, skin contact with the mango peel can also cause a rash due to a compound similar to that found in poison ivy. We keep mangoes far away from our kitchen.
