Made with ripe bananas, The Difference Baker’s specialty gluten-free pancake mix, and a blend of other awesome ingredients, each bite offers a symphony of sweetness and satisfaction.

  • 1 bag TDB Pancake Mix
  • 10-12 bananas
  • 6 ⅓ cups sugar
  • 5 ½ cups milk (we use unsweetened ripple milk)
  • 1 cup vegetable oil (we use sunflower)
  • ⅓ cup vinegar (we use apple cider vinegar)
  • 2 tbsp vanilla extract
  • 2 tbsp lemon zest
  • 1 tbsp salt


    1. Combine all dry ingredients in a large bowl and whisk thoroughly to ensure there are no lumps.
    2. Gradually add all the wet ingredients to the dry mixture, stirring well until everything is fully incorporated.
    3. Prepare loaf pans by lining them with loaf liners or cupcake liners.
    4. Divide the batter evenly among the lined loaf pans.
    5. Sprinkle the tops of the batter with sugar before placing them in the oven.
    6. Bake at 300°F (150°C) for 30-35 minutes, or until the loaves feel firm and a toothpick inserted into the center comes out clean.
    7. Allow the loaves to cool in the pans, then carefully unmold them onto a parchment-lined baking sheet.
