Ingredients
- 1 bag TDB Pancake Mix
- 10-12 bananas
- 6 ⅓ cups sugar
- 5 ½ cups milk (we use unsweetened ripple milk)
- 1 cup vegetable oil (we use sunflower)
- ⅓ cup vinegar (we use apple cider vinegar)
- 2 tbsp vanilla extract
- 2 tbsp lemon zest
- 1 tbsp salt
Directions
- Combine all dry ingredients in a large bowl and whisk thoroughly to ensure there are no lumps.
- Gradually add all the wet ingredients to the dry mixture, stirring well until everything is fully incorporated.
- Prepare loaf pans by lining them with loaf liners or cupcake liners.
- Divide the batter evenly among the lined loaf pans.
- Sprinkle the tops of the batter with sugar before placing them in the oven.
- Bake at 300°F (150°C) for 30-35 minutes, or until the loaves feel firm and a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in the pans, then carefully unmold them onto a parchment-lined baking sheet.
