- 1840g Cold vegan butter, cut into ½-inch cubes
- 224g Maple syrup
- 840g Ice cold water
Instructions
- Start by creating ice water: add a handful of ice cubes to a small bowl and cover them with water. Set it nearby.
- In a medium mixing bowl, whisk together the The Difference Baker Baking/Pancake Mix to ensure even distribution.
- Add the cold vegan butter to the flour mixture. Using clean hands, press the butter into the flour, flattening each piece into a “flake.” Avoid breaking the butter into small crumbs — those flakes are the secret to a beautifully flaky crust! Continue until the butter is evenly incorporated, with no large chunks remaining.
- Drizzle in the maple syrup and 100g of the ice water. Gently toss the mixture with a fork, ensuring the liquid is evenly distributed while preserving the butter’s integrity. Gradually add more ice water until the dough holds together when pressed between your fingers. It may look slightly crumbly — resist the urge to over-hydrate it!
- Transfer the dough to a clean work surface lined with parchment or wax paper. Shape the dough into a disc approximately 1 inch tall and 6 inches wide. Wrap it tightly in the parchment paper and refrigerate for 15 minutes.
